Bird's Eye Berbere with recipe for Ghanaian Peanut Chicken Soup
One of the most famous Ghanaian dishes is groundnut (peanut) soup. Peanuts came to Ghana via the Portuguese, helping to create rich, creamy soups and stews, in the absence of milk or dairy. Traditionally served with rice balls, we love this soup with brown rice, quinoa or whole grain bread.  
 Chile pepper based Berbere, perfect for adding heat.

Ghanaian Peanut Rub with recipe for Ghanaian Vegan Cauliflower Wings
This is an alternate recipe for the berbere spice and peanut rub. It would make a great side dish for meat-eaters.
 Peanuts came to Ghana via the Portuguese.

Grains of Paradise with recipe for Lemon Pudding Cake
We also received a recipe for Grains of Paradise Avocado Poached Egg.  
Grains of Paradise is a very special, little known West African spice, famous among chefs all over the world for its uniquely woodsy, spicy, citrusy and warm flavor. It makes a great dry rub on steaks or kebabs or as a marinade for fish and vegetables- or play up the spice’s citrusy flavor and use a lemon vinaigrette for salads.

The April spice kit from Raw Spice bar featured flavours from Ghana in West Africa. I'm curious to try the Peanut Soup! One complaint about this kit is that there no background information on the region and very little information on the dishes. There was actually no information on the origin of the Pudding Cake and how it relates to Ghanaian cuisine. That's not the norm for RawSpiceBar though.
