November is the Pondicherry Spice Kit. 
Vaarungal (“Welcome” in Tamil)! You’ve landed in Pondicherry! The weather is warm and the costal breeze is refreshing but a Chai tea won’t hurt. The Romans, the Chinese, the Dutch, the English, and the French have all been here and their influences remain present. Namely the French. Warm Vadouvan odors collide with buttery smells wafting from kitchens in the French Quarter. With colonization, architectural and cuisine changed; However, the complex layers of Indian spices shine through each French inspired dish.

This is a really interesting spice kit this month. I've  never heard of the Pondicherry (or Puducherry) region of India. It's at the southern end of India, on the Bay of Bengal. It's so interesting how different cultures have shaped the cuisine of the region. I can't wait to learn more and to try some of these dishes!
